Orange-Ginger Lingonberry Sauce

Makes about 4 cups

4 cups fresh or frozen lingonberries

2 cups sugar

8 ounces pomegranate juice

1/3 cup candied ginger, sliced thin or chopped

1 mandarin orange, sliced thin with peel

Add all ingredients to a medium saucepan. Bring to a boil, reduce heat and simmer for 20-25 minutes. Sauce will thicken as it cools.
